Fjordling Smokehouses - About
Fjordling Smokehouses was established in 1982 by Andrew Espir, who was later joined by his wife Susan Espir and uses traditional family methods passed down through generations.
Andrew's Great Grandfather Godtskalk Gjerde (below left) was a farmer and glacier guide in Norway in the days when food had to be preserved using either smoking, salting or air drying as electric refrigeration was not widely available. His son Anders Gjerde continued smoking food from his house beside a spectacular Norwegian fjord and passed on his methods and recipes to Andrew's family.
