The original smoked rainbow trout. As a starter serve slices with brown bread and butter. Garnish with parsley or dill and lemon wedges. Alternatively serve as a main course with lightly scrambled eggs and brown bread.

 Lightly oak smoked, serve on a cheeseboard as normal, or delicious used in a mornay sauce, or melted on toast with a sliced tomato
